Can I use leftover rice for chicken fried rice?

Yes, leftover rice is one of the best ingredients for making chicken fried rice. Cold, day-old rice has much less moisture, so it will not become mushy when you stir-fry it. Freshly cooked rice tends to be too soft and sticky, making it hard to achieve the right texture. If you must use fresh rice, spread it on a tray to cool and dry a little before frying.
