Malai roll is among the traditional Indian desserts, with a soft, creamy texture and sweet delight in each bite. This is a simple recipe to prepare the Malai roll at home, suitable for festive celebrations or when you crave for something sweet. For the filling of a malai roll, a smooth, creamy filling is made from paneer or Indian cottage cheese that's been mixed with milk and sugar. The paneer for this malai roll is freshly prepared by curdling the milk, which is then melted with sugar and cardamom to create this very mildly sweet and fragrantly flavoured fill. This milk is boiled till it becomes very runny in consistency and then simmered into thin layers. These delicate layers are gently lifted and used to wrap the paneer fill. That's how the Malai Roll gets a soft texture and light flavour. Rolls are garnished with pistachio or almond slivers. Malai roll is prepared with utmost patience, so do keep this in mind while trying out the malai roll recipe.

Ingredients required for Malai Roll

  1. 1 cup milk
  2. 2 cup milk powder
  3. 3 tsp ghee
  4. 1/2 cup sugar powder
  5. 1/2 tsp cardamom powder
  6. 2 tbsp red tutti frutti
  7. 2 tbsp green tutti frutti

Cooking steps for Malai Roll

  1. 1
Begin by heating 2 Tsps of ghee in a large kadai or a non-stick pan over medium heat.
  2. 2
Once the ghee melts and coats the pan, add 1 cup of milk and mix well with the ghee.
  3. 3
Add 2 cups of milk powder to the milk-ghee mixture.
  4. 4
When you mix, the milk powder will dissolve and make a smooth-thick mixture; ensure everything is mixed well so that it looks uniform.
  5. 5
Add half a cup of powdered sugar to it.
  6. 6
Stir continuously to dissolve the sugar and evenly spread in the mix. The sugar will melt into the mixture, sweeten it, and then thicken it.
  7. 7
Keep on stirring till the mixture starts thickening and takes its shape.
  8. 8
This process requires some patience; however, it is an essential step for the perfect consistency of Malai Roll.
  9. 9
Add the red tutti frutti and the green tutti frutti.
  10. 10
Add cardamom powder, 1/2 Tsp for a warm, aromatic flavour.
  11. 11
Add 1 Tsp of ghee to the mixture so that it becomes non-sticky and easy to handle.
  12. 12
Continue stirring until the mixture thickens enough to hold its shape.
  13. 13
Now spread this mixture onto a butter paper sheet and roll it gently into a cylindrical shape, using your palms to smoothen out the roll.
  14. 14
Once the roll is smooth, spread over a layer of silver vark (silver leaf) all over the roll.
  15. 15
Leave the roll to set for around 30 minutes.
  16. 16
After setting, cut these into equal-sized portions with a sharp knife.
  17. 17
Now, the Malai Roll is ready to be devoured and is best relished over a cup of tea or as a dessert on its own.
  18. 18
Store it in an airtight container in the refrigerator to keep it fresh.

FAQs

What is Malai Roll?

Malai Roll is an excellent Indian dessert with soft, spongy rolls filled with rich, creamy malai. These are usually served cold, made from a soft cake-like base, soaked in flavoured syrup or milk, filled with sweetened malai and garnished at times with nuts or saffron. The malai roll is that favourite sponge cake, light and airy, paired with the rich; velvety cream.

How is a Malai roll made?

The Malai Roll is prepared by creating a soft sponge cake or biscuit base. It is often prepared by baking or steaming the batter. Then, it is cut into rectangular pieces or thin slices. Over the cake layers, a mixture of sweetened malai cream, often flavoured with cardamom or saffron, is spread. Layers are then rolled up and tightened into tight, bite-sized rolls. The rolls are drenched in a light sugar syrup or flavoured milk to give them a sweet flavour. As soon as the rolls are assembled, they are cooled so the flavours infuse into each other.

Can I use a filling of my choice in the Malai Roll?

Yes, the Malai Roll is highly customisable. Add rose water and saffron to the cream or vanilla essence for a flavour twist. Other variations may include chopped fruits like mango or berries or flavoured syrups like rose or kewra water.
