Ingredients required for Misal Pav

  2. 10-12 curry leaves
  3. 1/2 tbs garam masala
  4. 1 tomato
  5. 1 tsp salt
  6. 1/2 tsp turmeric powder
  7. 1/4 tsp hing
  8. 1 tsp goda masala
  9. 2 tbs cooking oil
  10. 1 onion
  11. 1/2 tsp mustard seeds
  12. 1 tsp ginger garlic paste
  13. 200 gms sev
  14. 2 green chillies

Cooking steps for Misal Pav

    Soak 1 cup of mixed sprouted lentils overnight in water and then boil in 2 cups of water till they are tender. Drain the excess water and keep the lentils aside. Heat 2 tbsp of oil in a pan over medium heat. Add 1 small finely chopped onion and saut till it becomes soft. Add 2 minced garlic cloves and 1-inch grated ginger. Saut for another minute.

    Now add 1 tbsp of cumin seeds, 1 tsp of coriander powder, and 1 tsp of garam masala powder. Saut for 1 minute. Then add 2 cups of chopped tomatoes and cook until soft and mushy.

    Add the saut ed lentils, 1 cup of water, and seasoning salt. Lower the heat and simmer for 10-15 minutes. Then, fry 1/2 cup of sliced onions in hot oil till they turn golden brown and keep them aside on a paper towel. Then, chop 1/4 cup of fresh coriander leaves

    Now, beat 1/2 cup of yoghurt with 1 tbsp of lime juice, and slice 4-6 pav bread halves lightly toasted.

    Spoon some curry into a bowl and top with yoghurt, coriander, and crispy onions.

    Serve toasted pav on the side. During the process of simmering the curry, all the spices get soaked up by the lentils, therefore making for a very well-seasoned dish. And, of course, crispy onions and coriander add that much-needed texture and freshness to it, while yoghurt cools down the spicy curry.
