Boil the lasagna noodles in a big pot according to their package instructions until just al dente. Drain and set them aside. You can toss them into a little olive oil so that they won't stick to each other.

Combine ricotta or cottage cheese with a cup of shredded mozzarella, some grated Parmesan, and an egg if using, and season with a pinch of salt and pepper. Mix everything well while seasoning with salt and pepper.

Preheat your oven to 375 F (190 C). Begin layering in a 9x13-inch baking pan.

Spread half the chicken filling over the bottom layer. Add a layer of lasagna noodles over the chicken, and then a portion of the cheese mixture spread over the noodles. Add another layer of the chicken filling. Continue layering like this until you use up all your ingredients. Make sure your final layer is noodles.

For the final touch, spread the remaining chicken filling out and sprinkle the rest of the mozzarella cheese. If you want it to be extra gooey and cheesy, go ahead and add even more on top of this last layer.

Close up the dish with foil without letting the foil touch your cheese. Put that in the oven and bake for 25 minutes.

For the last 15 to 20 minutes of baking, remove the foil and roast the top until it is bubbly with the cheesiness that melted into golden muenster.
