One of the most renowned and succulent dishes in Indian cuisine, Chicken Tikka is popular for its tender pieces of chicken marinated in a spicy mix with yoghurt. They are then barbequed. It is loved by one and all because of its rich, velvety aroma and vibrant colours, making it highly sought after for hosting celebrations or casual dining. To make Chicken Tikka, boneless pieces of chicken are marinated in a mixture of thick yoghurt and a blend of fragrant spices such as cumin, coriander, paprika, garam masala, and turmeric. Besides, yoghurt tenderizes the chicken but even acts as a gateway to let the flavours dissolve deep inside, giving it a flavour-packed crust upon cooking. Other ingredients, such as garlic, ginger, and lemon juice, give it that sour, spicy touch. After preparing the marinade, the pieces of chicken are pierced, and fire broiled, usually in a tandoor, a type of clay oven that gives an exceptionally smoky flavour to them and an impeccably charred exterior. It is often served hot, garnished with fresh coriander lemon wedges and mint chutney on the side. Spiced, smoky perfection with a beautiful blend of texture and flavour goes perfectly well with naan, rice, or indeed a part of a huge Indian meal. Be it relished as an appetiser or as a main course; Chicken Tikka is regarded highly for its splendid taste and satiating texture. Try out this Chicken Tikka recipe today.

Cooking steps for Chicken Tikka

  1. 1
To make chicken tikka, first prepare the marinated chicken.
  2. 2
Take 1 kg of chicken, cut into medium-sized pieces, and put them in a large mixing bowl.
  3. 3
Now, in a separate bowl, combine 200 gms thick curd, adding to it 2 tbsp of ginger-garlic paste, 1 tbsp of red chilli powder, 1 tsp of turmeric powder, 1 tbsp of garam masala, 1 tbsp of coriander powder, 1 tbsp of kasuri methi, juice of 1 lemon, and salt to taste.
  4. 4
Mix all these ingredients together so you get a fine marinade.
  5. 5
Add your pieces of chicken to this prepared marinade. Fold the chicken pieces into the marinade lightly so that the pieces do not break.
  6. 6
Each flavour is distinct and will stand out once the final chicken tikka is ready. Kasuri methi, for example, has a unique taste that makes your chicken tikka look store-bought. For the flavours to blend in, it's necessary to leave the marinade on its own for about a few hours. For best results, you can throw it into the fridge overnight. In this recipe, the chicken has been marinated for 3-4 hours. This way, the flavours will penetrate deeply, giving you a rich and even taste.
  7. 7
Finally, heat your grill or oven to 200 C. Now, place the marinated chicken pieces onto skewers without crowding them. If grilling, lightly brush your chicken with some cooking oil or melted butter, then set the skewers on the grills. Grill for about 15 to 20 minutes or until done, turning the skewers from time to time and basting midway through cooking with a little more oil or melted butter so the chicken is kept moist. Put the skewers in the baking tray and bake for 20-25 minutes, turning over the chicken once midway through by smearing it with oil or butter. Chicken should be cooked but there are slight black burns on the outer surface.
  8. 8
Take out the chicken tikka from either the grill or oven. Place it on a serving plate. Sprinkle thinly cut onions and fresh coriander leaves for added freshness. Serve hot with mint chutney or whatever side dish you want.

FAQs

What is Chicken Tikka?

Chicken Tikka, one of the most popular Indian dishes, consists of boneless pieces of chicken marinated in yoghurt and spices, generally grilled or baked until tender and slightly charred. Served with mint chutney and lemon wedges, it usually comes as an appetiser or main dish.

Is it possible to make Chicken Tikka without an oven or grill?

Yes, you can cook Chicken Tikka on the stovetop by taking a heavy-bottomed pan or grill pan. Just cook the marinated chicken pieces in medium heat until they are well cooked and slightly charred.

How long should I marinate Chicken Tikka?

It is always good to marinate Chicken Tikka for at least 2 hours so that the flavours can develop. If you want it more spice-intensive and tender, marinate your chicken overnight, i.e., about 6-8 hours, so that it marinates completely with the spices.
