Prepare with the main ingredients which are sweet corn kernels, boiled potatoes, breadcrumbs, chopped vegetables like onions and capsicum, ginger-garlic paste, green chillies, and spice powder that is cumin powder, coriander powder, garam masala. Boil the sweet corn kernels till they are tenderly soft. Drain them very well and chop them fairly coarsely in a food processor. Do not over-blend so that the kebabs have some texture due to the corn.

Add mashed potatoes and coarsely ground corn to a large mixing bowl. Together both form the core of kebabs which provide the required structure and crunch along with a creamy texture. Chopped onions, capsicum, and green chillies are also added to the mixture. These add a crunchy texture and a pinch of spice to the kebabs. Ginger-garlic paste, cumin powder, coriander powder, garam masala, and turmeric are mixed in to give flavour to the kebabs. Add a pinch of salt and fresh coriander leaves for an aromatic flavour. Use breadcrumbs or roasted gram flour as a binding agent. The mixture will hold the shape of kebabs when dry enough. If it feels too soft, add more breadcrumbs.

Once the dough is prepared, shape it out into equal portions, and then into patties, cylinders, or oval kebabs, as preferred.

If you want it crispy, pound the breadcrumb lightly and coat each kebab with it before frying. Put oil in a sufficient amount to shallow fry in a hot pan. Gently put the kebabs into the skillet and fry on medium heat such that both sides of the kebab will be golden brown and crispy. It must take around 3-4 minutes on one side. Do not overcrowd the pan because it may hamper its proper cooking.

However, baking them in a preheated oven at about 200 C (390 F) for around 20 minutes while turning them halfway would make better kebabs. You can grill them on your stovetop or barbecue for this smoky taste. Serve the corn kebabs hot, preferably with a dollop of mint chutney, tamarind sauce, or any creamy yoghurt dip. Sprinkle some chaat masala on your kebabs for a zing just before serving it. These corn kebabs are simply the best dish one can ever have, easy to adapt to any taste bud. Add grated cheese for more richness, or chopped nuts for a nice crunch surprise.
