Curry rice is a deliciously flavoured and aromatic dish that is easy to prepare yet promises a great experience in terms of taste. First, you will need the following ingredients: one finely chopped onion, two crushed garlic cloves, and one teaspoon of crushed ginger.

These three basic ingredients create a very fragrant foundation from which the entire meal reverberates. Heat a tablespoon of oil in a large pot or a deep skillet over medium heat.

Then, when the oil gets hot, put in your chopped onion and saut until it becomes translucent and starts caramelizing, which can take about five minutes. The sweetness of the onion goes fantastically well with the spices; it creates a warm and inviting aroma in your kitchen.

Add rice. You can also make two cups of Jasmine or Basmati rice with this recipe. Rinse the rice in cold water until the water runs clear to remove excess starch. This is an important step because it allows the rice to cook evenly and not become gummy.

Pour the rice into the pot and stir it well into the aromatic onion and spice mixture. Let it for about a few minutes to toast the rice lightly. It brings out the nutty flavour and texture in it.

Add four cups of stock or water to it. Do not add more as it will make the rice soft. Use water with an extra teaspoonful of salt if you are using it instead of stock. Add also one teaspoon of salt to the pot. Toss everything mildly, to mix, then bring to a boil.

When boiling, reduce the fire to low, cover with the pot's lid, and let it simmer. This sort of cooking allows the rice to absorb the flavour while being fluffy and tender in texture.

If you wish to add some vegetables to it, then it would be a great choice to add one cup of frozen peas at this stage.

The peas add pops of colour and a burst of sweetness that complements spices perfectly; fold them into your rice mix and let everything cook, in general, for about 15 to 20 minutes or until the rice has absorbed all the water and all grains are soft.

Once the cooking time is done, turn off the heat and let the rice sit, covered, for another five minutes. This sitting time will enable the grains to become firm and enable the rice to just get the right texture. Finally, separate the grains by gently fluffing them with a fork and serving them hot.
