Rinse 1 cup of Masoor dal well under water. Soak it for 30 minutes after washing it at least 2-3 times.

Once soaked for half an hour, keep the water aside, as you can use it later to enhance your masoor dal recipe.

Add the soaked dal along with 3 cups of water to the pressure cooker.

Now, add the salt as per your taste and 1/2 tsp of turmeric powder.

Let the dal cook on a medium flame for 3-4 whistles, and then turn the flame off. Wait for the pressure to release before opening the lid of the cooker.

Stir the dal using a ladle to give it an even consistency.

Now, let's prepare the tadka. Heat ghee or oil on low to medium flame in a separate pan. Add cumin seeds, around 1 tsp, and let them crackle. This tadka is the soul of our Masoor dal recipe, where the depth and flavour combination will leave you wanting more.

Add one finely chopped onion to the pan and continue frying it until it takes a dark brown hue. This will add sweetness and crunch to our Masoor dal recipe.

Add finely chopped, grated, or pureed ginger-garlic to the mix and saute it for a couple of minutes. It will release an appetising aroma and give a delicious taste to our masoor dal recipe.

Take two medium-sized tomatoes and chop them finely. Add them to the tadka and cook until the ghee separates from it. This will give our Masoor dal a slightly tangy taste, with some sweetness to it.

Add 1/2 tsp of lal mirch powder, 1/2 tsp of coriander powder and 1/4th tsp of garam masala to the tempering. Cook it for a couple more minutes until the spices are well combined and all flavours mingle together.

Transfer the cooked Masoor dal into the pan with the tadka and mix well. If required, add water to get a perfectly creamy and comforting texture in our Masoor dal recipe. Cook over low heat for 5-7 minutes for the flavours to combine.

If the dal appears to be too thick, heat some water in a separate pan, add the boiling water to your dal and adjust the consistency as per your preference. Finally, garnish your Masoor dal with chopped coriander leaves and serve hot with rice or roti on the side.
