Add the chicken or vegetable broth and 2 cups of water to a large pot. Right before it boils, add some soy and fish sauce to add depth to your recipe. Add some salt.

Heat one tablespoon of olive or sesame oil over medium flame as the broth starts boiling. Add slices of onion, garlic, and ginger.

Fry for 2-3 minutes until aromatic and the onions turn translucent. Now you will feel the oil basking in flavours, giving an additional dimension to your soup.

Add the saut ed aromatics to the cooking broth. Then add your mixed veggies/carrots, mushrooms, bok choy, spinach, or any of your favourite vegetables. Let the vegetables cook in the broth for about 5-7 minutes or until the vegetables are tender. You can add any quick-cooking ingredients, such as spinach or leafy greens, towards the end to avoid overcooking.

While your broth and vegetables are simmering, cook your noodles in a separate pot. Rice noodles, ramen, and egg all work, although the cooking time may vary with each. Cook your noodles as you like, and then drain them and put them aside.

Add chicken, tofu, shrimp, or any meat/protein of your choice. If using chicken or beef, cook beforehand so you do not overcook. If you're using tofu, add it straight to the other broth ingredients and warm it through.

Once the broth is made and the protein is warmed, it's time to make the soup. Place the cooked noodles into individual serving bowls. Next, pour the hot broth and vegetables over the noodles.

Sprinkle with fresh cilantro or basil. Try adding some thinly sliced green onions on top to help intensify the flavours. If you like a citric flavour, serve it with lime wedges on the side.

Sprinkle some chilli flakes or black pepper if you desire it to be spicier.
